Black tea leaves are made by going through the withering, rolling, oxidation (fermentation to turn leaves from green to a coppery red or deep brown), and drying (firing) process. Black tea is 100% oxidized. Health benefits:
During the fermentation process, the EGCG molecules in the tea leaves are converted into theaflavins and thearubigins. So this process makes black tea milder in nature according to traditional Chinese medicine (green tea is cool in nature).
